Arugula with Orange and Kalamata Olives

Ingredients
- 2 T lemon juice
- 1 1/2 t olive oil
- 8 oz arugula
- 2 C fennel, sliced thin
- 3/4 C red onion, vertically sliced
- 12 ea kalamata olives, pitted and sliced
- 2 C orange sections, coarse chop
- 3 T goat cheese, crumbled
Instructions
- Whisk together the lemon juice and olive oil, season to taste with salt and pepper.
- Toss the arugula, fennel, onion and olives in the dressing.
- Plate the salad, garnish with the orange pieces and goat cheese and serve.
